Head Butcher OverviewThe Head Butcher is a leadership role responsible for overseeing the operation of a butcher shop, ensuring compliance with industry standards and regulations.Key Responsibilities:Direct and supervise staff, evaluating their performance and providing coaching and support to enhance skills and productivity.Manage meat and poultry preparation, thawing, and storage processes to maintain quality and safety standards.Maintain knowledge of US Public Health Rules and Regulations, enforcing adherence daily to prevent health hazards.Ensure cleanliness and organization of the butcher shop and thawing rooms, minimizing equipment damage and improving efficiency.Conduct workstation spot checks to prevent deterioration and waste, promoting sustainable practices.Prepare workstations, equipment, and supplies for inspections, maintaining high service standards and customer satisfaction.Financial Management:Oversee costs through proper use, handling, and maintenance of records, reports, supplies, and equipment to optimize budget utilization.Identify potential expense reductions through cost control measures and implement efficient solutions.Review timesheets, prepare reports, and requisition items correctly and on time to ensure smooth operations.Leadership and Motivation:Monitor and manage assigned workstation functions to achieve optimal results.Assign duties and responsibilities to staff, observing and evaluating their performance to enhance growth and development.Recommend personnel actions to ensure adequate staffing and continuous improvement, fostering a positive work environment.Qualifications and Education:Minimum 2 years' experience as a Head Butcher in an upscale hotel, resort, or cruise ship setting.Culinary school degree required, with strong emphasis on management, communication, problem-solving, decision-making, and interpersonal skills.
