**Culinary Trainer / Head Chef**
**About Us**:
Our sister company is a specialized Culinary Training academy based in Kochi. We are looking for an experienced Chef Trainer join our institute at Kochi to train the junior chefs for our clients in the UK, Ireland, Germany, Malta and other European countries.
**Job Summary**:
**Main Duties and Responsibilities**:
- The culinary trainer must be able to train students with various chef skills, different cuisine, baking and pastry making and more that is required to become a chef or work within the food production department.
- Hiring and training of junior kitchen staffs
- Develop cost effective and sustainable menus which achieve teaching learning and assessment outcomes.
- Making special menus for the overseas guests and private functions
- Sourcing, ordering and purchasing food items from suppliers/stores, negotiate the price with suppliers.
- Maintain the food stock control, and waste management in the kitchen.
- Supervise students to prepare, cook and serve dishes according to course objectives.
- Adhere to current food hygiene and health and safety legislation ensuring the needs welfare of students and staffs.
- Maintain a high standard of cleanliness within the kitchen.
- Ensure equipment is used correctly and well maintained and all problems reported to management.
- Ensure proper grooming and hygiene from all staff in the production unit
- Be actively involved in training, mentoring and assessment of students within the restaurant kitchens.
- Liaise and communicate with the senior manager to ensure a high standard of curriculum delivery is maintained in the educational training.
- Assist students with their assignments, projects and competitions.
- Keep up to date with industrial trends and practices.
- Perform any other duties and responsibilities that may be reasonably expected of this role.
- Any other duties required by management.
- Work within agreed financial boundaries
In addition to the above areas of responsibility the position may be required to undertake any other reasonable duties relating to the broad scope of the position.
**Qualifications and Skills**:
- Degree in professional cookery, culinary arts or related field.
- Minimum 5 years Head Chef/Sous level experience from a reputed Hotel / Cruise Ship, or International Restaurant.
- Must have good knowledge of Continental, and North Indian Cuisine. Knowledge of Bakery and Pastry would be an advantage.
- Experience in MS Office (Word, Power Point and Excel)
- Food safety certificate
- Good communication skills in written and verbal
- Presentable and professional appearance
- Able to meet the deadlines for the training
- A strong passion for training and interacting with individuals from diverse backgrounds and fostering mindful learning for all.
- Strong leadership and communication skills to effectively train and motivate the kitchen team.
- Flexibility to work in a fast-paced and dynamic environment, adapting to changing business needs.
- Passion for food, creativity, and a strong desire to share knowledge and skills.
