**Job Title**: Halwai Chef de Partie (CDP)
**Department**: Kitchen / Culinary
**Reports to**: Head Chef / Sous Chef
**Job Overview**:
The Halwai Chef de Partie (CDP) specializes in preparing traditional Indian sweets, snacks, and desserts. This role is responsible for maintaining the quality, authenticity, and presentation of various sweets and savory items, ensuring high standards in food preparation and hygiene. The Halwai CDP works under the guidance of the Head Chef and collaborates with the culinary team to deliver an exceptional dining experience.
**Key Responsibilities**:
- **Preparation and Cooking of Halwai Items**:
- Prepare and cook a range of traditional Indian sweets (such as gulab jamun, jalebi, laddoos) and snacks (such as samosas, kachoris), ensuring authenticity and consistency.
- Use traditional recipes and methods, adjusting for taste and presentation when necessary.
- Experiment with new and seasonal flavors in collaboration with the Head Chef to add variety to the menu.
- **Quality Control and Presentation**:
- Ensure all sweets and snacks meet quality and presentation standards before they are served.
- Conduct regular taste and quality checks to ensure consistency in flavor, texture, and appearance.
- Use fresh, high-quality ingredients to maintain authenticity and flavor.
- **Inventory and Stock Management**:
- Monitor stock levels of essential ingredients, including spices, ghee, milk, and sugar.
- Assist in ordering and managing inventory to prevent shortages or excesses, ensuring all ingredients are fresh.
- Track expiry dates of perishable items, maintaining proper storage and reducing waste.
- **Safety and Compliance**:
- Follow all health, hygiene, and sanitation protocols, including HACCP and local safety standards.
- Ensure ingredients and prepared items are properly labeled and stored.
- Conduct regular cleaning of equipment and kitchen area, reporting any maintenance needs.
- **Staff Training and Supervision**:
- Supervise junior kitchen staff in preparing and cooking Halwai items, providing guidance and training as needed.
- Share traditional cooking techniques and help maintain consistent standards.
- Manage assigned kitchen section, ensuring that staff are organized and all ingredients and equipment are prepared.
- **Menu Development and Collaboration**:
- Collaborate with the Head Chef to develop and refine the Halwai menu, adding seasonal and festive specialties.
- Contribute ideas for new items that complement the traditional Halwai offerings.
- Participate in team meetings and actively engage in discussions for continuous improvement.
**Qualifications**:
- Diploma or certification in culinary arts or specialized training in traditional Indian sweets and snacks preferred.
- 3+ years of experience in a Halwai kitchen, with at least 1 year in a CDP role.
- Expertise in traditional Indian sweets, desserts, and snacks preparation.
- Knowledge of authentic ingredients, spices, and techniques used in Halwai cuisine.
