An Italian Line Cook is responsible for preparing and cooking Italian dishes in a fast-paced kitchen environment, ensuring consistency and quality in each dish. They work along the line (station) in the kitchen, specializing in various Italian cooking techniques, such as pasta-making, pizza baking, risotto preparation, and other traditional Italian recipes. The line cook must follow recipes, adhere to food safety regulations, and collaborate with other kitchen staff to ensure a smooth, efficient service.
**Key Responsibilities**:
- **Food Preparation and Cooking**:
- Prepare, cook, and present traditional continental dishes such as pasta, pizza, risottos, soups, and sauces.
- Set up and organize workstations before service, ensuring all ingredients and equipment are readily available.
- Follow recipes and portion sizes to ensure consistency and high-quality dishes.
- Manage the preparation of ingredients (e.g., chopping vegetables, making dough, marinating).
- Cook food to order in a timely manner, maintaining high standards of flavour, presentation, and portion control.
- **Station Management**:
- Work on a specific station within the kitchen, such as pasta, pizza, grill, or sauté, depending on the kitchen setup.
- Maintain a clean and organized workstation, including the safe storage and handling of ingredients.
- Ensure the station operates smoothly and efficiently during meal service, especially during peak hours.
- **Quality Control**:
- Ensure that all dishes meet the restaurant’s standards for quality, taste, and presentation.
- Perform regular checks of food storage areas to ensure ingredients are fresh and properly stored.
- Monitor the cooking process to avoid overcooking or undercooking.
- **Team Collaboration**:
- Work closely with other kitchen staff, such as the sous chef, prep cooks, and dishwashers, to maintain kitchen flow.
- Communicate effectively with front-of-house staff to ensure proper order timing and adjustments.
- Assist with other stations if needed during busy periods or when extra help is required.
- **Health and Safety Compliance**:
- Follow all food safety and sanitation guidelines, ensuring cleanliness and hygiene in the kitchen.
- Maintain a clean and safe work area, including properly cleaning utensils, equipment, and cooking surfaces.
- Adhere to proper food storage techniques and ensure that ingredients are rotated according to FIFO (first in, first out) procedures.
- **Customer Service**:
- Occasionally communicate with the front-of-house team to handle special requests or dietary requirements.
- Ensure that food is served promptly and in a manner that reflects the restaurant’s commitment to quality.
- **Menu Familiarity and Ingredient Knowledge**:
- Be knowledgeable about Italian cuisine, ingredients, and cooking techniques to execute recipes accurately.
- Be open to learning new dishes or techniques from senior chefs or culinary training.
- Ensure that all menu items are prepared according to the restaurant's specifications.
**Required Skills and Qualifications**:
- Proven experience as a line cook or in a similar kitchen position, preferably in an Italian restaurant.
- Strong knowledge of Italian cooking techniques and dishes (e.g., pasta, pizza, risotto).
- Ability to work efficiently in a high-pressure, fast-paced environment.
- Strong organizational and multitasking skills.
- Knowledge of food safety standards and proper kitchen hygiene.
- Ability to communicate effectively and work collaboratively with kitchen and front-of-house teams.
- Basic knife skills and ability to handle kitchen equipment safely.
**Preferred Qualifications**:
- Culinary degree or certification.
- Experience with Italian ingredients, such as fresh pasta, cheeses, olive oil, and herbs.
- Experience working in a high-volume kitchen, especially in Italian or Continental cuisine.
**Work Environment**:
- Work in a professional kitchen, requiring long hours, standing for extended periods, and working under pressure.
- The role may involve working during evenings, weekends, and holidays, depending on restaurant hours.
- Requires physical stamina, the ability to lift heavy items and attention to detail.
Pay: ₹18,000.00 - ₹20,000.00 per month
