At the start of the shift, does mis-en-place in accordance with established recipes and using techniques according to policies.
- Checks with the Sous chef on quantities to ensure no over-production takes place.
- Arranges pre-meal mis-en-place of equipment and condiments.
- Follows measurements and procedures as detailed in the standard recipes.
- Adheres to portion control standards.
- Prepares all food items/food orders ensuring standard preparation timeframes are observed, for consistency.
- Mans the “live kitchen” in front of guests, as assigned.
- Acts as buffet runner.
- Follows standard procedures at all times & ensure hygiene, quality, taste and presentation standards.
- Cleans and organizes kitchen refrigerators and/or food storage areas.
- Checks on the quality of all food items / ingredients before preparation.
- Prepares food orders / items following measurements and procedures as detailed in standard recipes.
- Observes standard preparation time for all food items/orders

**2. SUPPLIES, COST CONTROL**
- Collects supplies from the storeroom and checks completeness compared to the requisition.
- Ensures inter-transfers are made as per consumption.
- Follows cost control procedures.
- Prepares spoilage/wastage reports.
- Assists the Sous Chef in preparing requisitions.
- Assists the Sous Chef in ensuring that the portion control policy is adhered to.

**3. HEALTH, SAFETY AND HYGIENE**

a) Follows safe working practices.
- Handles all equipment in the proper manner (all commis).
- Practices accident prevention measures (all commis).

b) Maintains the cleanliness of the workplace.
- Follows all hygiene procedures (all commis).
- Follows all procedures set for the closing and opening of a shift or a section (all commis).
- Follows garbage disposal procedures and standards (all commis)
- Stores food items properly (all commis).
- Inspects work area, utensils and tools to ensure that these are clean at the beginning of each shift.
- Checks all equipment to ensure all are in working order.
- Ensures that colleagues keep the work area clean after the preparation of food.

c) Maintains good personal hygiene and grooming.

Practices good personal hygiene (all commis).

Reports to work well groomed, in the specified uniform (all commis).

**Salary**: ₹20,000.00 - ₹22,000.00 per month
