Key Responsibilities
- **Menu Development and Planning**:
- Create innovative and authentic Kerala cuisine menus, incorporating seasonal and local ingredients.
- Develop special menus for events, banquets, and special occasions.
- Adapt traditional Kerala recipes to contemporary dining trends.
- **Food Preparation and Presentation**:
- Supervise all food preparation and presentation to ensure quality and consistency.
- Maintain high standards of taste, creativity, and presentation in all dishes.
- **Kitchen Management**:
- Oversee daily kitchen operations, including inventory management, ordering, and cost control.
- Ensure all kitchen equipment is maintained and in good working order.
- Implement and enforce kitchen policies and procedures.
- **Staff Management and Training**:
- Recruit, train, and manage kitchen staff, ensuring a high level of performance and teamwork.
- Conduct regular training sessions on cooking techniques, food safety, and sanitation.
- **Food Safety and Sanitation**:
- Ensure compliance with all health and safety regulations.
- Maintain cleanliness and organization in the kitchen.
- Implement and monitor HACCP and other food safety protocols.
- **Budgeting and Cost Control**:
- Manage food costs and ensure budgetary compliance.
- Monitor portion control and waste management.
- Develop and implement cost-saving measures without compromising quality.
- **Customer Interaction**:
- Interact with guests to gather feedback and ensure satisfaction.
- Address customer concerns and accommodate special dietary requirements.
- **Collaboration and Innovation**:
- Work closely with the Food and Beverage Manager and other departments to create a cohesive dining experience.
- Stay updated with industry trends and continuously seek ways to innovate and improve the culinary offerings.
Pay: ₹40,000.00 - ₹50,000.00 per month
