The duties of a Tandoor Chef de Partie (CDP) would include: 1. Setup and Organization: Assist in setting up the tandoor section of the kitchen, ensuring all equipment is in working order and ingredients are properly stocked. 2. Menu Development: Collaborate with the head chef to create a tandoor menu tailored to the outlet's concept, considering local tastes and preferences while maintaining authenticity. 3. Recipe Standardization: Develop standardized recipes for tandoor dishes to ensure consistency in flavor, portion sizes, and presentation across all orders. 4. Training and Hiring: Assist in hiring and training kitchen staff assigned to the tandoor section, ensuring they are knowledgeable about tandoor cooking techniques and safety procedures. 5. Quality Control: Implement quality control measures to maintain high standards of food quality, including regular taste tests, visual inspections, and temperature checks of tandoor-cooked items. 6. Inventory Management: Work closely with the head chef and management to establish inventory procedures for tandoor ingredients and supplies, ensuring sufficient stock levels while minimizing waste. 7. Customer Satisfaction: Monitor customer feedback on tandoor dishes and make adjustments to recipes or cooking techniques as needed to meet customer expectations and preferences. 8. Health and Safety Compliance: Ensure compliance with all health and safety regulations regarding food handling, sanitation, and kitchen cleanliness, particularly in the tandoor section. 9. Efficiency and Productivity: Optimize workflow and organization in the tandoor section to maximize efficiency and productivity, especially during peak hours. 10. Adaptability: Be flexible and adaptable to changes in menu offerings, kitchen procedures, and customer preferences as the outlet evolves and grows.
