We are looking for a talented Sous Chef to join our dynamic kitchen team. In this role, you will craft, prepare, and execute authentic and innovative savory dishes—from chaats to curries—that perfectly complement our renowned sweet offerings. You will play a vital role in menu creation, kitchen operations, and maintaining the highest culinary standards. This position reports to the Head Chef and will be based across our Mumbai locations. WHO YOU ARE You are a passionate and skilled chef with deep knowledge of Indian flavors, spices, and regional cooking techniques. You love creating exceptional savory dishes and enjoy experimenting with traditional and modern influences. You thrive in a fast-paced kitchen, are meticulous about flavor, presentation, consistency, and take pride in maintaining high operational and hygiene standards. With 4–5 years of experience in professional kitchens—including at least 1 year as a Sous Chef in hotels, restaurants, or bulk kitchens and 2–3 years specializing in Indian savory cuisine as a CDP —you are ready to contribute to one of Mumbai’s most exciting culinary brands. The role will require close collaboration across all kitchen sections to ensure seamless operations and exceptional guest experiences. WHO YOU WILL REPORT TO You will report directly to the Head Chef , who will mentor and guide you as you help shape and execute a savory offering that enhances the Bombay Sweet Shop experience. YOU WILL BE RESPONSIBLE FOR 1. Culinary Execution Prepare and cook high-quality Indian savory dishes (chaats, curries, snacks, fusion items) with accuracy and consistency. Follow recipes, portion standards, and maintain taste, texture, and presentation benchmarks. 2. Menu Development Collaborate with senior chefs to develop seasonal and innovative savory menus. Propose creative variations and contemporary twists while preserving authenticity and regional influence. 3. Kitchen Management Oversee station operations, prep, and cooking processes. Monitor inventory levels, ensure proper storage, maintain ingredient freshness, and minimize wastage. Supervise junior staff during shifts to ensure efficiency and adherence to FSSAI hygiene protocols. 4. Training & Leadership Train team members on spice blending, Indian cooking techniques, station management, and plating standards. Foster a culture of learning, discipline, and excellence in the kitchen. 5. Collaboration Work closely with FOH and other kitchen teams to maintain smooth service flow. Coordinate timelines for dish execution to ensure consistent quality and timely delivery. 6. Compliance Enforce kitchen safety protocols, hygiene practices, allergen awareness, and sanitation regulations. Ensure full compliance with FSSAI and internal SOPs. QUALIFICATIONS & SKILLS Education & Experience Culinary/Hospitality degree or equivalent hands-on experience. Minimum 1 year as a Sous Chef in hotels/restaurants/bulk kitchens. 2–3 years of experience as a CDP specializing in Indian savory cuisine (restaurant or hotel background preferred). Technical Skills In-depth understanding of Indian spices, flavor profiles, and regional culinary styles. Strong knowledge of traditional and modern Indian cooking methods. Proficiency in Excel/Google Sheets for stock and inventory management. Soft Skills Strong leadership abilities; able to supervise and train junior staff. Excellent organization, multitasking, and station management skills. Adaptability to fast-paced environments while maintaining quality. Strong attention to detail in taste, hygiene, and presentation. A collaborative team player with clear communication skills. High levels of creativity, passion, and culinary curiosity.
