Job Summary:
As a Management Trainee in F&B Cost Controls, you will be immersed in the financial operations of the Food & Beverage department. This role is designed to develop future leaders by providing hands-on training in cost control procedures, inventory management, vendor relations, and financial analysis specific to the F&B sector. The ideal candidate is detail-oriented, analytical, and eager to learn the financial side of hospitality operations.
Key Responsibilities:
- Assist in monitoring and controlling F&B costs on a daily basis.
- Support in conducting physical inventory counts (daily, weekly, monthly) for food, beverage, and operational supplies.
- Analyze consumption patterns and variance reports; highlight discrepancies and potential areas of wastage.
- Participate in menu engineering analysis and profitability assessments.
- Assist in monitoring supplier invoices, pricing, and deliveries to ensure accuracy and consistency.
- Maintain and update cost control databases, including recipes, standard costs, and stock levels.
- Support the F&B Cost Control Manager in preparing reports for management, including cost summaries, purchase reports, and usage trends.
- Collaborate with kitchen and bar staff to ensure portion control and standardization.
- Gain exposure to procurement processes and supplier negotiations.
- Ensure compliance with internal control policies and SOPs related to inventory and costing.

- Excellent analytical and organizational skills.
- Ability to work independently and as part of a team.
- Strong communication and interpersonal skills.
