About the Sous Chef Role

The primary responsibility of a Sous Chef is to maintain an efficient operation by constantly analyzing quality and cost of food production.

Responsibilities:

  • Maintain set budget and monitor time management.
  • Provide ongoing training and ensure that standards are followed.
  • Ensure safe, quality food products and complete guest satisfaction.
  • Develop and comply with systems, procedures, rules, objectives and timescales set by the organization.
  • Work within a technical/specialized area of expertise to improve the service and product provided.
  • Avoid behavior that could be perceived as unsuitable or unprofessional.
  • Accept direction and guidance from others in a timely manner.
  • Offer constructive feedback and support to subordinates to aid their personal and professional development.
  • Treat crew members fairly and without bias, maintaining a positive atmosphere.
  • Fully adhere to menus, recipes, methods and operational specifics provided.
  • Seek additional support and resources when necessary.
  • Complete set goals in an efficient and effective manner.
  • Conduct regular taste tests to ensure quality standards are being met.
  • Correct any discrepancies immediately to prevent further issues.
  • Assist Section Heads in preparing daily electronic requisitions according to forecasted figures.
  • Monitor and optimize the Dinner Service Line in assigned locations to ensure smooth and efficient service.
  • Use the Culinary Checklist to track production and preparation levels.
  • Guarantee adherence to Public Health regulations at all times.

Requirements:

  • Advanced culinary skills, leadership and experience required.
  • At least 8 years of experience in Quality Hotels and Restaurants.
  • Minimum 2 years of experience in a management role in a recognized luxury hospitality establishment or upscale cruise line.
  • Fluent written and spoken English essential.
  • Ability to communicate effectively with senior management crucial.
  • Possess strong decision-making and leadership abilities.
  • Good administrative skills necessary.
  • Proven coaching and mentoring experience.
  • Cost and quality awareness.
  • Adhere to scheduled work hours but remain flexible as needed.
  • Work effectively with international team members.
  • Perform duties under pressure and meet deadlines.

PREFERRED SKILLS:

  • Cruise Ship Experience or 5 star Hotel background.
  • Fluency in one or more additional languages desirable.
