Key Responsibilities:

Food Philosophy:

  • Maintain a standardized product that meets our high standards.
  • Ensure cost effectiveness and profitability in all areas.
  • Evaluate systems to facilitate improvement where possible.
  • Follow HACCP procedures and maintain clear records.
  • Exceed guest expectations in quality and service of food products.

Menu Planning:

  • Plan and design menus for food and beverages.
  • Pair wine with food tastefully.
  • Follow guidelines laid by the Executive Chef.

People Management:

  • Manage staff in each section to ensure efficient completion of tasks.
  • Monitor grooming and personal hygiene of staff.
  • Liaise with the Culinary Department to achieve event objectives.

Financial Management:

  • Oversee stock take and stock rotation.
  • Minimize food wastage and maintain cost effectiveness.
