Key Responsibilities:
Food Philosophy:
- Maintain a standardized product that meets our high standards.
- Ensure cost effectiveness and profitability in all areas.
- Evaluate systems to facilitate improvement where possible.
- Follow HACCP procedures and maintain clear records.
- Exceed guest expectations in quality and service of food products.
Menu Planning:
- Plan and design menus for food and beverages.
- Pair wine with food tastefully.
- Follow guidelines laid by the Executive Chef.
People Management:
- Manage staff in each section to ensure efficient completion of tasks.
- Monitor grooming and personal hygiene of staff.
- Liaise with the Culinary Department to achieve event objectives.
Financial Management:
- Oversee stock take and stock rotation.
- Minimize food wastage and maintain cost effectiveness.
