Job Description

As the Executive Pastry Master, you will oversee all aspects of bread and pastry production, ensuring the highest quality standards are consistently met while maintaining efficiency and consistency. Your responsibilities will include:

  • Leading and managing the bakery department, including bread, pastry, and dessert production, in alignment with the hotel's culinary standards and goals.
  • Developing and executing creative and innovative recipes for bread, pastries, and desserts, considering guest preferences, dietary restrictions, and seasonal ingredients.
  • Ensuring the highest standards of quality, taste, and presentation are achieved across all baked goods produced in the bakery.
  • Managing inventory, ordering, and stock control for bakery ingredients and supplies, minimizing waste.
  • Training, mentoring, and supervising bakery staff, fostering a culture of continuous improvement and excellence.
  • Collaborating with other departments to coordinate menu offerings, special events, and promotions.
  • Implementing and maintaining strict hygiene, sanitation, and safety standards in the bakery, adhering to regulations and guidelines.
  • Monitoring performance metrics, such as production efficiency, cost control, and guest satisfaction, implementing corrective actions as needed.
  • Staying updated on industry trends, techniques, and best practices in baking and pastry arts, incorporating innovations into the hotel's bakery operations.
  • Representing the hotel's bakery department professionally, fostering positive relationships and promoting the hotel's culinary excellence.

Qualifications

To succeed in this role, you will require:

  • Proven experience as a Head Baker, Pastry Chef, or similar role in a high-end bakery, patisserie, or hotel environment.
  • Extensive knowledge of bread and pastry production techniques, including sourdough, laminated dough, and cake baking.
  • Strong leadership and team management abilities, with a track record of inspiring and motivating staff to achieve outstanding results.
  • Excellent organizational and multitasking skills, prioritizing tasks and managing time effectively in a fast-paced environment.
  • Creativity and innovation in recipe development and menu planning, with a keen eye for detail and aesthetics.
  • Exceptional communication and interpersonal skills, collaborating effectively with colleagues at all levels.
  • Commitment to upholding high standards of quality, hygiene, and safety in bakery operations.
  • Flexibility to work early mornings, late evenings, weekends, and holidays as required by the demands of the job.
  • A degree or diploma in Culinary Arts, Baking and Pastry, or a related field is preferred.

Estimated Salary

Rupees 1,200,000 - 1,800,000 per annum, depending on experience and qualifications.
